Hand Made Chocolate

- Antioxidants - Essential trace minerals -
- Processed sugar free - Dairy free - Gluten free -



Equal parts :

Cocoa butter (Source Taste Nature, Dunedin)
or cold pressed coconut oil with equal parts good quality organic cocoa
1 cup of each cacao butter or coconut oil & cocoa
good pinch of pink himalayan salt or naturally iodised salt
2 tablespoons of apple cider vinegar
2 tablespoons of nut butter or tahini (optional, but recommended)
1/4 cup liquid sweetener like maple syrup or coconut nectar

In a water bath (bowl placed in a saucepan of hot water or if you can use a element that is very gentle) melt the coconut oil or cacao butter very gently until it is just melted.

Leave to cool off for 3-6 minutes then add cocoa, nut butter or tahini, apple cider vinegar & salt.

Pour into chocolate moulds or silicon moulds are perfect for this.
Leave to set in the freezer.

TIP: not raw honey as a sweetener, raw honey can be only used if the mixture has well cooled off because heat applied to raw honey makes for an unfavorably toxic to the body outcome

TIP: Coconut oil has a lower melting point than cacao butter. Coconut oil melts at 22-24 degrees so your chocolates will need to stay in the fridge. Cacao butter has a higher melting point and these can stay at room temperature. If you are making chocolates for gifts be sure to use cacao butter so they do not melt before they reach that special someone.

TIP: you can use cacao - sort after for it's detoxification & mineral rich properties but this can be a neuron toxin in large quantities or daily use. Please only use 3/4 teaspoon in a large batch (1cup).

Fig & chocolate - dried figs
Nuts & fruit - chopped favourite nuts & fruit
Add your favourite roasted nuts - macadamia, brazil or almond
Coconut rough - stringy coconut
Energise - add a teaspoon of maca powder
Antioxidant boost - 1 teaspoon beetroot or greens powder
